You can boil the potatoes ahead and save some time. When ready to use, toss them with a drizzle of olive oil and lemon zest. To warm the potatoes up, just pop them into an oven preheated to 390 °F for 10 minutes. In this recipe, I like to use garlic-infused olive oil to sauté the asparagus.
