To make One Pot Turmeric Cauliflower Soup, you will need the following ingredients:
In a large pot over medium heat, heat oil and add onions. Sauté for about 8 minutes until soft and translucent.
Add garlic and sauté for further 2 minutes until aromatic.
Add cauliflower, chickpeas, broth, coconut milk, turmeric, salt, pepper, red pepper flakes, cayenne, and tamari, and mix through to combine well.
Bring soup to a boil then reduce the heat to low, cover and simmer for 30-35 minutes. Stir the pot every few minutes.
Once cauliflower is softened, use a hand immersion or a food processor and blend ingredients for a few minutes until soup has a creamy texture. You may need to work in batches to get it perfectly smooth.
