This tasty Sesame Pasta Chicken Salad is one of my favorite recipes. My daughter loves it for her school lunch box too and with the easy preparation time I am able to make it for her a few times a week.

The tangy Asian style salad dressing is extra flavorsome and so versatile, you can prepare a batch and keep extra bottles in the fridge for future use! Toss it over cooked pasta with chicken pieces, cilantro and chopped green onions. It’s perfect!

    Toast sesame seeds

    In a large skillet over medium-high heat cook the sesame seeds while continuously stirring until lightly toasted, then remove from the heat and set aside.

    In a large pot of boiling, lightly salted water, boil and cook the pasta for 8-10 minutes until al dente then drain the pasta and rinse under cold water until cool. Transfer to a large salad bowl.

    In a bottle with a tight-fitting lid, mix the vegetable oil, soya sauce, vinegar, sesame oil, sugar, sesame seeds, ginger and pepper and shake well to combine.
