I love the sweetness of cooked fruit with pork. Of course the traditional pairing with pork is apples, but this Peach Pork Chops recipe is an absolute winner too especially when you are looking for a way to use up excess peaches this summer. 

To make this pork dish, start by cooking seasoned pork chops for 2 minutes on each side. Remove the pork from the skillet and set aside. Add the peaches, onion and balsamic vinegar to the same skillet and cook for one minute before returning the pork to the pan. Place it in the preheated oven for 10 minutes until cooked through. To serve, sprinkle with basil.

Steps to make Peach Pork Chops

Heat oven

Preheat the oven to 400 °F.

Heat oil

Place 1 tablespoon of olive oil in a large skillet or Dutch oven and heat over medium heat.

Season pork

Season 2 pork chops on both sides with salt and pepper.

Cook pork

Cook seasoned pork chops 2 minutes per side then remove and place on a plate.

Cook peaches, onion and balsamic vinegar

Place 2 cups of sliced peaches, 1 cup of sliced red onion and 3 tablespoons of balsamic vinegar in the same skillet. Stir to combine and cook for 1 minute on medium heat.

Add pork

Place the pork on top of the peaches and place the skillet in the oven. Cook for 10 minutes.

Serve

Garnish with fresh basil and serve immediately.
