For the salad:
- 2 handfuls Red cabbagefinely shredded
- 3-4 Radishessliced
- 1 Red bell pepperor yellow, sliced
- 1 Spring onionssliced
- 1 handful sprouted Mung beans
- 2 Chicken Breastcooked , shredded (or half a rotisserie chicken)
For the Soy and Ginger Dressing:
- 3 tbsp Tamari soy
- 3 tbsp Rapeseed oil
- 1½ tbsp Lime juice
- 1 tbsp Fresh gingerminced

Red Cabbage Salad with Shredded Chicken is one of my favorite summer salads. It has a lovely tangy dressing and it is jam packed with tasty super super foods like red cabbage, bell pepper and mung beans. If you’d like a heartier meal, you can serve this salad with rice, noodles or quinoa.Â
Start by making a dressing from soy, rapeseed, lime juice and ginger in a jar. Assemble the salad ingredients in your favorite salad bowl. Pour over the dressing and mix well. Before serving, garnish with sesame seeds and spring onion slices.

I tried this out but personally think its bland and would go with the spicy peach salad instead.
Uniquely made though mine wasnt as cool looking as the photo and i have no idea how to use chopsticks i still managed to make a good tasting salad!

Easily one of my favorite salads simple to make and doesn't take much time at all.
My favorite thing to eat at work for lunch, the spiciness wakes you up and the light meal fills you up until dinner time if you got a small stomach like myself :)
Decided to just buy premade chicken and shred it in here to save time. Not too spicy despite the description so i added a dab of hot sauce and red pepper flakes to it.
