
Red Cabbage Salad with Shredded Chicken is one of my favorite summer salads. It has a lovely tangy dressing and it is jam packed with tasty super super foods like red cabbage, bell pepper and mung beans. If you’d like a heartier meal, you can serve this salad with rice, noodles or quinoa.
Start by making a dressing from soy, rapeseed, lime juice and ginger in a jar. Assemble the salad ingredients in your favorite salad bowl. Pour over the dressing and mix well. Before serving, garnish with sesame seeds and spring onion slices.
