In a large bowl, mix the apple, poultry seasoning, salt and pepper together.
Crumble the ground chicken into the apple and seasoning bowl and mix together to combine well.
Using your hands, shape 8 x 3-inch patties.
In a large, lightly greased cast-iron skillet over medium heat, cook the patties for 5-6 minutes per side until cooked through and no longer pink in the center. Drain excess liquid, if necessary.
