Sheet Pan Steak Fajitas is a fast and easy dinner idea for hungry, busy people. This flavorful dish is definitely one of my personal favorites when I need a simple yet vibrant weeknight meal for the whole family.
This one-pan dinner is healthy and loaded up with multicolored bell peppers and infused with flavorful Mexican spices. Broiled in strips and served onboard warmed corn tortillas with a simple cream sauce, chopped cilantro, and lime wedges, these steak fajitas feel like a treat while being easy to make. Sometimes the simpler, the better, especially when it comes to cooking up some Tex-Mex fajitas.
To make the Sheet Pan Steak Fajitas, you will need the following ingredients:
Preheat the broiler and position the rack on the top shelf. Put a rimmed baking sheet in the oven as the oven preheats.
In a small bowl, whisk together 2 tablespoons olive oil, 1 teaspoon ground cumin, ½ teaspoon kosher salt, ½ teaspoon ground chipotle chili powder, and ½ teaspoon black pepper.
In a bowl, combine sliced bell peppers and onion. Add half of the prepared marinade and toss to combine.
In another bowl, combine 12 ounces sliced steak and the remaining half of the marinade and toss.
Carefully remove the hot baking sheet from the oven and coat with cooking spray. Add vegetables and broil for 10 minutes.
Remove the pan from the oven and move the peppers to the sides of the pan, placing steak in the center.
Broil for 3 minutes or to desired doneness.
Sprinkle ¼ cup cilantro leaves and lime wedges over the pan.
In a small bowl, mix together the remaining ¼ teaspoon salt, ½ cup sour cream, 1 tablespoon fresh lime juice, and ¼ teaspoon ground red pepper.
Heat 8 tortillas according to the package instructions.
Assemble tortillas by layering warm corn tortillas with steak, vegetables, sour cream sauce, and garnish with cilantro leaves. Enjoy!
