I love to save up my discarded sourdough starter to make this delicious Sourdough Discard Vegan Chocolate Cake. One of the things which puts people off homemade sourdough is throwing away the excess sourdough starter while you are feeding it. I hate that too and that’s why I am sharing this zero waste recipe. Added bonus: it’s vegan too!
Start by mixing flour, brown sugar, cocoa powder, baking soda and salt in a medium bowl. In a separate bowl, mix your excess sourdough starter with water, vinegar, vanilla extract and olive oil. Pour the wet ingredients into dry ingredients and stir. Bake the batter until a skewer inserted comes out clean. Enjoy!
To make the Sourdough Discard Vegan Chocolate Cake, you will need the following ingredients:
Preheat the oven to 350 °F and line with parchment paper and grease an 8-inch round baking pan with olive oil.
Combine 1 cup of flour, 1 cup of brown sugar, ¼ cup of cocoa powder, 1 teaspoon of baking soda and ½ a teaspoon of salt in a medium bowl.
Mix ½ a cup of discarded starter, ½ a cup of water, 1 tablespoon of vinegar, 2 teaspoons of vanilla extract and ⅓ cup of olive oil in a separate mixing bowl.
Pour the wet ingredients into the bowl with the dry ingredients. Mix until just moistened and pour the batter into the prepared pan.
Bake in the oven for 25 to 30 minutes or until a skewer inserted in the center of the cake comes out clean.
Remove from the oven and place the cake in the pan on a wire rack to cool completely.
Serve with a cup of your favorite tea or coffee as an afternoon treat.
