To make Southwest Quinoa Salad, you will need the following ingredients:
Cook quinoa as per package instructions or cook quinoa with a ratio of 1 cup dry quinoa to 1.5 cups water. Bring to a boil and cook on low for 12 minutes. Once cooked, set aside for 5 minutes and fluff.
In a large salad bowl, mix the black beans, bell peppers, corn, cilantro, red onion, jalapeno, garlic, lime juice, olive oil, cumin, chili powder, salt and ground black pepper.
