It, too, combines chicken, fresh berries, lettuce leaves, and poppyseed dressing, but it’s keto and has no mayo. However, this lightened-up version is just as delicious. What a better way to satisfy our summer cravings!
The base of this salad is the easiest thing to make. First, you just add all ingredients to a bowl and toss. Then make the dressing. The dressing is what completes this salad. It is sweet and tangy and speckled with poppy seeds. Finally, pour the dressing over the top of the strawberry and chicken salad and combine thoroughly. Garnish with microgreens and serve right away! Bonus: any leftover dressing will keep well in the fridge for up to 4 days.
