4 Strawberries large, sliced
Microgreens to taste, for garnish
For dressing:
¼ cup White wine vinegar or champagne vinegar
½ tsp Salt
1 Shallots small, chopped
1 tbsp Lemon juice
1 ½ tsp Dijon mustard
Monk fruit sweetener 1 ½ tsp
½ cup Olive oil light
1 tbsp Poppy seeds

This salad recipe takes inspiration from Panera’s strawberry poppyseed salad with chicken. It, too, combines chicken, fresh berries, lettuce leaves, and poppyseed dressing, but it’s keto and has no mayo. However, this lightened-up version is just as delicious. What a better way to satisfy our summer cravings!

The base of this salad is the easiest thing to make. First, you just add all ingredients to a bowl and toss. Then make the dressing. The dressing is what completes this salad. It is sweet and tangy and speckled with poppy seeds. Finally, pour the dressing over the top of the strawberry and chicken salad and combine thoroughly. Garnish with microgreens and serve right away! Bonus: any leftover dressing will keep well in the fridge for up to 4 days.

Combine salad ingredients

In a large bowl, combine 6-8 cups lettuce, 3 cooked and chopped chicken breasts, â…“ cup sliced red onions, and 4 large sliced strawberries.

Combine dressing ingredients

In a blender or food processor, combine ¼ cup white wine vinegar, ½ teaspoon salt, 1 small chopped shallot, 1 tablespoon lemon juice, 1 ½ teaspoons Dijon mustard, 1 ½ teaspoons monk fruit sweetener.

Process for 20 seconds. With the motor running on high, pour in ½ cup olive oil in a thin, steady stream.

Add poppy seeds

Transfer the dressing to a mason jar and stir in 1 tablespoon poppy seeds.

Pour dressing over salad

Pour the dressing over the salad and toss to combine.

Garnish with fresh microgreens and enjoy!
