The base of this salad is the easiest thing to make. First, you just add all ingredients to a bowl and toss. Then make the dressing. The dressing is what completes this salad. It is sweet and tangy and speckled with poppy seeds. Finally, pour the dressing over the top of the strawberry and chicken salad and combine thoroughly. Garnish with microgreens and serve right away! Bonus: any leftover dressing will keep well in the fridge for up to 4 days.
To make the Keto Strawberry Chicken Poppyseed Salad, you will need the following ingredients:
In a large bowl, combine 6-8 cups lettuce, 3 cooked and chopped chicken breasts, ⅓ cup sliced red onions, and 4 large sliced strawberries.
In a blender or food processor, combine ¼ cup white wine vinegar, ½ teaspoon salt, 1 small chopped shallot, 1 tablespoon lemon juice, 1 ½ teaspoons Dijon mustard, 1 ½ teaspoons monk fruit sweetener.
Process for 20 seconds. With the motor running on high, pour in ½ cup olive oil in a thin, steady stream.
Transfer the dressing to a mason jar and stir in 1 tablespoon poppy seeds.
Pour the dressing over the salad and toss to combine.
Garnish with fresh microgreens and enjoy!
