I love to prepare these Strawberry Spinach Jar Salad for a summer lunch on hot days! Some people are confused initially by the addition of strawberries to a salad with chicken, avocado and spinach, but everyone who has tasted it adores the combination!
To make this salad, start by making a citrus poppy seed dressing. Layer the salad ingredients into two large mason jars, starting with the dressing. Divide the remaining salad ingredients in half and start creating layers in this order: shallots, cucumbers, strawberries, asparagus, chicken, avocado, spinach and almonds. Shake well before serving.
To make my version of Strawberry Spinach Jar Salad, you will need the following ingredients:
Place ½ a cup of fresh grapefruit juice in a small bowl and whisk together with 1 tablespoon of maple syrup, ½ a teaspoon of sea salt, ¼ teaspoon of ground pepper,
1 teaspoon of Dijon mustard, 1 minced clove of garlic, 1 teaspoon of poppy seeds and 1½ tablespoons of olive oil.
Take two 32-ounce mason jars and place 3 tablespoons of the citrus dressing in each.
Layer the remaining ingredients into the jars in this order: shallots, cucumbers, strawberries, asparagus, chicken, avocado, spinach and almonds.
When you are ready to serve the salad, give each jar a good shake and pour into a bowl.
This Strawberry Spinach Jar Salad might have an unusual flavor combination but I think it really works. Try this delicious salad for lunch soon and come back to leave a comment below with your thoughts.
