I love to prepare these Strawberry Spinach Jar Salad for a summer lunch on hot days! Some people are confused initially by the addition of strawberries to a salad with chicken, avocado and spinach, but everyone who has tasted it adores the combination!

To make this salad, start by making a citrus poppy seed dressing. Layer the salad ingredients into two large mason jars, starting with the dressing. Divide the remaining salad ingredients in half and start creating layers in this order: shallots, cucumbers, strawberries, asparagus, chicken, avocado, spinach and almonds. Shake well before serving.
