Stuffed Halloween Jack O’ Lantern Peppers are another one of my Halloween classic recipes! They are so cute with their carved out pumpkin faces! Remember to use orange peppers so they really do look like carved out pumpkins!
To make these, I start by cooking beef in a sauce flavored with Worcestershire sauce, paprika and tomato puree. I cook white rice and add this to the beef just before I stuff the peppers. While the beef is cooking, I cut the tops off the peppers and carve out scary faces in the side. So much fun!
To make my Stuffed Halloween Jack O’ Lantern Peppers, you will need the following ingredients:
Preheat the oven to 350 °F. Line a baking sheet with parchment paper.
Add some oil to a pan and fry the onion, garlic and mushrooms for 5-10 minutes.
Add the beef and fry until the beef browns.
Pour in the Worcestershire sauce, add the paprika, tomato puree and season generously. Pour boiling water over the contents of the pan until just covered. Simmer for 20 minutes.
As the beef simmers, cook the rice according to the package directions.
Slicing off the tops of the peppers and set to one side. Deseed the peppers. Carve jack o’lantern faces into one side of the peppers and place them on the prepared baking sheet.
Once the beef sauce has thickened, stir in the drained cooked rice. Stuff it into each pepper and place the pepper tops on top.
Bake the peppers in the oven and cook until they have just started to roast.
Remove the peppers from the oven and serve immediately.
