These Vanilla Mint Marshmallows are delicious homemade marshmallows with peppermint flavor. I make batches of these around Christmas and Valentine’s Day and I love to pop them on top of a mug of hot chocolate for a hint of peppermint and they look the part too!
To make these marshmallows start by bringing sugar, corn syrup and salt to a boil. Add the boiled sugar mixture to a bowl with gelatin and beat to make marshmallow. Add mint and vanilla and transfer to a loaf pan. Leave to set for a few hours before cutting into squares. These marshmallows will keep for up to 3 days in an airtight container.
To make Vanilla Mint Marshmallows, you will need the following ingredients:
Line a 9x5-inch bread loaf pan with parchment paper and grease well.
Combine ¾ cup of granulated sugar with ⅓ cup of corn syrup, a pinch of salt and 3 tablespoons of the water in a saucepan. Turn the heat to high and bring to a boil. Boil until the temperature reaches 238 °F on a candy thermometer.
Add the remaining 3 tablespoons of water to a large bowl and sprinkle 1 packet of gelatin on top and leave to sit.
When the sugar syrup reaches 238 °F on the candy thermometer, slowly drizzle it into the gelatin mixture while beating constantly with a handheld mixer. Take care not to splash the syrup on the edges of the bowl, or it will harden immediately.
Continue to beat the mixture for 5-6 minutes, until white, fluffy and very sticky.
Beat in ¼ teaspoon each of peppermint and vanilla extract and beat until fully combined.
Transfer the marshmallow mixture to the prepared loaf pan and spread.
Let the marshmallow set uncovered for at least 3 hours.
Sprinkle powdered sugar on a work surface. Transfer the marshmallow mixture from the pan to the work surface. Slice into squares, dipping the knife in powdered sugar between cuts. Or using a cookie cutter, cut the marshmallow into heart shapes.
Roll the edges of the marshmallows in powdered sugar.
Store the marshmallows for up to 3 days in an airtight container at room temperature.
