I always love finding vegan recipes for life’s simple pleasures like breakfast, chocolate and banana crepes! In fact, they work just as well for dessert too and honestly, you don’t even need a reason to make these, I am heading to my kitchen right now! Whole bananas spread with chocolate, maple and peanut butter spread and wrapped in chocolate crepes, need I say more? They’re healthier!
To make Vegan Chocolate Crepes with Banana, you will need the following ingredients:
In a large mixing bowl, whisk ¾ cup of buckwheat flour, 5 tablespoons of tapioca flour, 3 tablespoons of coconut sugar or brown sugar, 2 tablespoons of cocoa powder and 1⅛ cup of dairy-free milk until well combined. While cooking, if the batter thickens while standing, add a little more milk, as needed.
In a large non-stick skillet over medium heat, heat some oil then pour and swirl batter into the skillet, coating the base. Cook for about 2-3 minutes until the crepe easily lifts, flip and cook for another minute.
In a separate mixing bowl, whisk 3 tablespoons of maple syrup, 2 tablespoons of powdered peanut butter, 2 tablespoons of cocoa powder, 1 tablespoon of water or more maple syrup and a pinch of salt until combined.
Generously fill each crepe with chocolate spread and wrap a whole banana inside. Eat and enjoy!
