1 ½ lbs Beef stew meat
2 ½ tbsp Olive oil divided
Salt to taste
Black pepper to taste
1 ¾ cups Onion chopped, yellow, 1 large
1 ¼ cups Carrots peeled and chopped, 3 medium
1 cup Celery chopped, 3 medium
1 ½ tbsp Garlic minced, 4 garlic cloves
8 cups Beef broth low-sodium, or chicken broth
2 (14-oz) cans Diced tomatoes
1 ½ tsp Dried basil
1 tsp Dried oregano
½ tsp Dried thyme
1 lb Potatoes red or yellow potatoes, chopped into ¾-inch cubes
1 ½ cups Green beans chopped trim ends first
1 ½ cups Corn frozen
1 cup Green peas frozen
⅓ cup Parsley chopped fresh

Vegetable Beef Soup


I don’t know about you, but this cold weather makes me crave soup! This Vegetable Beef Soup is a perfect antidote to the cold dark days of winter. I love the tender pieces of beef, which add a satisfying bite to this gorgeous recipe.

To make this soup, I start by browning the beef. Next, saute onion, carrots, and celery before adding broth, tomatoes, browned beef, basil, oregano, thyme, and seasoning to taste with salt and pepper. Simmer for 30 minutes before adding potatoes, green beans. Five minutes before the end, add frozen corn and peas. Once these are heated through, the soup is ready to serve, garnished with parsley.

Steps to make Vegetable Beef Soup


Brown beef


Heat 1 tablespoon of olive oil in a large soup pot over medium-high heat. Dry the beef pieces using paper towels and season with salt and pepper. Start by browning half of the beef pieces in the pot, turning halfway through. Transfer the beef to a plate and add an extra ½ tablespoon of oil to the pot and repeat using the rest of the beef.


Sauté onion, carrot, and celery


Add another 1 tablespoon of oil to the empty pot. Add onions, carrots, and celery and saute for 3 minutes. Add garlic and saute for 1 more minute.


Add liquid and bring to boil


Add 8 cups of broth to the pot with 2 cans of tomatoes, the browned beef, 1½ teaspoons of basil, 1 teaspoon of oregano, ½ teaspoon of thyme. Season with salt and pepper to taste before bringing the mixture to a boil. Once boiling, cover the pot and reduce the heat to low. Simmer for about 30 minutes, stirring once or twice.


Cook potatoes


Add 1 pound of potatoes and simmer for 20 more minutes.


Add green beans


Mix in 1½ cups of green beans and simmer for 15 more minutes until tender.


Stir in corn and peas


Finally add frozen corn and peas and cook for five more minutes.



Serve warm, sprinkled with parsley.
