Vegetable Beef Soup
I don’t know about you, but this cold weather makes me crave soup! This Vegetable Beef Soup is a perfect antidote to the cold dark days of winter. I love the tender pieces of beef, which add a satisfying bite to this gorgeous recipe.
To make this soup, I start by browning the beef. Next, saute onion, carrots, and celery before adding broth, tomatoes, browned beef, basil, oregano, thyme, and seasoning to taste with salt and pepper. Simmer for 30 minutes before adding potatoes, green beans. Five minutes before the end, add frozen corn and peas. Once these are heated through, the soup is ready to serve, garnished with parsley.

Steps to make Vegetable Beef Soup

Heat 1 tablespoon of olive oil in a large soup pot over medium-high heat. Dry the beef pieces using paper towels and season with salt and pepper. Start by browning half of the beef pieces in the pot, turning halfway through. Transfer the beef to a plate and add an extra ½ tablespoon of oil to the pot and repeat using the rest of the beef. | ||
