2 cups Potatoes mash
1 ounce Butter
2 Leek large, washed, finely sliced
1 cup Milk
1 tbsp All-purpose flour
3 ounces Cheddar cheese grated
3 tbsp Breadcrumbs
Salt to taste
Black pepper to taste

If you have never tasted our Anglesey Eggs Recipe then now is definitely the time to serve it for breakfast one morning. Served in a soup-like bowl on a bed of mashed potatoes and hard-boiled eggs with a thick, cheesy and creamy sauce and some thinly sliced leeks for flavor.

I sprinkle a few bread crumbs over to bake a crispy topping and serve it with some crispy bacon strips on the side.

Steps to make Anglesey Eggs Recipe

Preheat oven and prepare baking dish

Preheat oven to 200 °C/400 °F/gas 6 and generously grease an ovenproof baking dish with butter.

Cook leeks

In a large frying pan over medium heat, melt 1 ounce of butter and add 2 large, thinly sliced leeks. Season with generous amounts of salt and pepper to taste and cook for about 5 minutes until tender but not burnt.

Add flour

Increase the heat to medium-high and stir in 1 tablespoon of flour. Cook while stirring continuously for about 2 minutes.

Add milk

Continue stirring and slowly pour in 1 cup of milk. Continue cooking for about 2 minutes until thick and creamy then reduce heat to simmer for about 5 minutes.

Add cheese

Stir in 1½ ounces of grated Cheddar cheese and season with salt and pepper to taste.

Prepare mashed potato layer

Add a layer of mashed potatoes and spread evenly to cover the entire base of the baking dish.

Add eggs

Place boiled egg quarters over the mashed potatoes and gently press them in.

Add sauce and breadcrumbs

Pour prepared cream sauce over the eggs and mashed potatoes and finally top with 3 tablespoons of bread crumbs and the remaining 1½ ounces of grated Cheddar cheese.

Bake

Bake in the preheated oven for 20 minutes until bubbling in the center and golden brown on top.

Serve

Serve hot and enjoy!
