To make the Aquafaba Chocolate Mousse, you will need the following ingredients:
In a medium bowl, using a hand or stand mixer, whip 55 milliliters chilled aquafaba until soft peaks form.
Add ⅛ teaspoon cream of tartar.
Continue to whip and add in 50 grams powdered sugar one tablespoon at a time until stiff peaks form. And set aside.
In a large bowl, combine 75 grams of solid coconut milk, 75 grams dark chocolate, 55 milliliters water, and ⅛ teaspoon salt. Place the bowl over a pot of simmering water and melt the ingredients, stirring until smooth.
Fill a smaller bowl with ice and water and place a bowl with melted chocolate over it.
Add ½ a teaspoon vanilla extract and beat the chocolate mixture using a hand mixer until smooth and light.
Gently fold in the whipped aquafaba.
Divide the mixture between glasses and chill for a minimum of 3 hours before serving.
Serve chilled with whipped coconut cream and chocolate shavings on top.
