Whip aquafaba to soft peaks

In a medium bowl, using a hand or stand mixer, whip 55 milliliters chilled aquafaba until soft peaks form.

Add cream of tartar

Add ⅛ teaspoon cream of tartar.

Whip to stiff peaks

Continue to whip and add in 50 grams powdered sugar one tablespoon at a time until stiff peaks form. And set aside.

Combine coconut milk, chocolate, water, and salt and melt

In a large bowl, combine 75 grams of solid coconut milk, 75 grams dark chocolate, 55 milliliters water, and ⅛ teaspoon salt. Place the bowl over a pot of simmering water and melt the ingredients, stirring until smooth.

Place chocolate mixture over ice bath

Fill a smaller bowl with ice and water and place a bowl with melted chocolate over it.

Beat chocolate mixture

Add ½ a teaspoon vanilla extract and beat the chocolate mixture using a hand mixer until smooth and light.
