This the Best-Ever Cauliflower Stuffing (Keto) is one of my favorite keto recipes for Thanksgiving. This will 100% be on my Thanksgiving table this year. I love to make cauliflower stuffing – it is low carb and the cauliflower acts like a sponge to soak up all the delicious flavors. The stuffing cooks on the stovetop leaving more room in your oven for turkey! I’m sure this recipe will be on your keto Thanksgiving recipes list too.
To make this stuffing, sauté onion, carrot, and celery until soft. Add the mushrooms and cauliflower. Season to taste with salt and pepper. Cook until the vegetables are tender and add parsley, rosemary, and sage. Stir until combined. Pour over the broth and continue to cook until totally tender and liquid is absorbed.
To make Best-Ever Cauliflower Stuffing (Keto), you will need the following ingredients:
Place 4 tablespoons of butter in a skillet and melt over medium heat.
Sauté onion, carrot and celery in the skillet for 7-8 minutes until soft.
Add the chopped head of cauliflower and 1 cup of mushrooms. Season to taste with salt and pepper. Cook for 8-10 minutes more until tender.
Mix in ¼ cup of freshly chopped parsley, 2 tablespoons of freshly chopped rosemary, and 1 tablespoon of freshly chopped sage. Stir until combined.
Add ½ a cup of broth.
Cook for 10 more minutes until the stuffing is totally tender and all the liquid is absorbed.
Sprinkle with the reserved scallion greens before serving.
