Your whole family will adore these tasty Vegetarian Buckwheat and Mushroom Croquettes. Made with a delicious mushroom filling, coated with a bread crumb coating and fried until crispy.
To make these croquettes, start by cooking buckwheat. Sauté onions and mushrooms and once cooked, combine with the buckwheat. Shape into patties. Prepare egg and bread crumbs to coat the patties. Fry the patties on each side until crisp and golden. Serve with your favorite dipping sauce.
To make Vegetarian Buckwheat and Mushroom Croquettes, you will need the following ingredients:
Place 1 cup of uncooked buckwheat in a saucepan of salted water. Cook over medium heat.
Transfer the cooked warm buckwheat to a food processor and blend until ground. Transfer to a large mixing bowl.
Heat 2 tablespoons of oil in a skillet. Add 1 diced onion and 1 grated carrot. Sauté for 5 minutes until soft. Add ½ pound of sliced mushrooms and cook for another 5 minutes. Transfer the mixture to a food processor and pulse until minced. Add to the mixing bowl with buckwheat.
Add 1 egg, 1 tablespoon of semolina, 1 teaspoon of salt, and ¼ teaspoon of pepper. Stir well to combine. If the mixture seems dry, add some water 1 teaspoon at a time.
Wet your hands and form oval-shaped flattened patties (about the size of an egg).
Break an egg into a small bowl and beat with a fork. In a second bowl, add ¾ cup of bread crumbs.
Dip each patty into the beaten egg before dipping into bread crumbs. Place the croquettes on a plate or cutting board until ready to cook.
Place a large deep skillet over medium heat. Add ¼ inch of oil.
Place the croquettes in the skillet and cook in batches for 3 minutes on each side.
Serve warm with your favorite dipping sauce.
