This Buffalo Chicken Meatballs Bento Box recipe is a really handy paleo lunch. I like to make a batch of these in advance and leave them to cool before dividing into lunchboxes. I serve them for lunch alongside some salad and pita bread. 

To make these meatballs, simply mix the ground chicken with an egg, almond meal, bell pepper, green onions, onion powder, garlic powder, and salt. Shape the mixture into balls and bake in the oven. Once cooked, toss with warmed buffalo sauce and serve with ranch dressing. If you are having these for lunch, they taste delicious cold too.

Heat oven and prepare a baking sheet

Preheat the oven to 375 °F. Line a baking sheet with parchment paper.

Prepare chicken meatballs

In a large bowl, combine 1 pound of ground chicken with 1 egg, ¼ cup of almond meal, ¼ diced bell pepper, 3 thinly sliced green onions, ½ a teaspoon of onion powder, ½ a teaspoon of garlic powder, and ¼ teaspoon of sea salt.
