These Buffalo Chicken Zucchini Boats are a delicious low carb dish with a spicy kick. I often make this chicken and zucchini dish for dinner on a hot summer day. This protein filled dish is low carb and only requires 4 ingredients.
To make this recipe, cook the chicken until cooked through. Stir in the buffalo wing sauce.
Prepare the zucchini by cutting each one in half, lengthwise. Scoop out the seeds from the center out of each zucchini half, leaving a ¼-inch thick zucchini boat. Place the zucchini in the baking dish and spoon the chicken mixture into the zucchini boats. Sprinkle with cheese and cover the baking dish with foil. Bake for 35 minutes.
To make Buffalo Chicken Zucchini Boats, you will need the following ingredients:
Place 1 pound of ground chicken in a large non-stick skillet and cook over medium-high heat for 7-9 minutes. Stir the chicken occasionally and break large clumps apart using a wooden spoon.
When the chicken is cooked, remove the skillet from the heat and stir in ½ a cup of buffalo wing sauce.
Slice each zucchini in half, lengthwise. Using a spoon, scoop out the seeds from the center of each zucchini half. Make sure you leave about at least ¼-inch thick zucchini. Transfer each zucchini half to the baking dish, inside facing up.
Spoon the chicken mixture into the zucchini boats and top with 1 cup of mozzarella cheese.
Cover the baking dish with foil and bake in the oven for around 35 minutes until cooked through.
Serve immediately.
