Jar salads are one of my favorite things and this Chicken & Quinoa Jar Salad does not disappoint. So easy to prepare in advance and the chicken and quinoa in this salad make for a filling and delicious lunch.
Layer ingredients into a mason jar. Whisk balsamic vinegar and mustard to make a salad dressing. I usually place the dressing in a separate container to carry alongside the salad. When you are ready to eat, pour the dressing over the salad and enjoy!
To make my version of Chicken & Quinoa Jar Salad, you will need the following ingredients:
Place the ingredients in a mason jar in layers starting with carrot, ⅓ cup cooked red quinoa, ½ a chopped cucumber, 6 ounces of grilled chicken, 3 strawberries and 8 halved cherry tomatoes.
Top jar with crumbled feta chгсeese and a handful of spinach leaves or salad leaves of your choice.
Combine ¼ cup of balsamic vinegar and 2 tablespoons of Dijon mustard in a separate container.
To serve, transfer the salad to a bowl and pour over the dressing.
