Sandwiches, I’d eat them for breakfast, lunch and dinner if I could, and this Chicken Salad Sandwich is one of the best. We all know you can’t mess with the classics and this is one of those classic sandwich fillings. I add a little freshly chopped dill at the end to bring an extra little something.
For this sandwich filling, I start by boiling skinless chicken breasts in water with lemon slices and dill. Then I combine the cooked chicken with crunchy celery, sweet apple and red onion. I like to serve this filling on fresh crusty baguette with lettuce and garnished with some finely chopped dill for that extra burst of fresh flavor!
To make Chicken Salad Sandwich, you will need the following ingredients:
Place the chicken at the bottom of a large pot in a single layer. Arrange the lemon slices and sprigs of dill on top of the chicken. Cover the chicken with at least an inch of water.Bring to a boil, then reduce the heat to low and allow to simmer for 10 minutes until the chicken is cooked through. Remove from the pot and allow to rest for 10 minutes more before cutting into 1 inch slices.
Add the sliced chicken, apple, onion, and celery to a large salad bowl and mix together.
In a separate bowl, whisk the mayo, mustard, and vinegar together. Season with salt and pepper to taste and whisk again.
Add the dressing to the salad and toss well to coat evenly
Serve on baguette with lettuce. Garnish with the chopped dill.
