This Balsamic Grilled Chicken Strawberry Caprese Salad is a delicious twist on a classic Italian salad – the caprese. I love the combination of strawberry with creamy mozzarella and sweet yet tangy balsamic grilled chicken. You will love this recipe if you try it!

It’s so easy to prepare too. Start by making a dressing/marinade for the chicken. Marinate the chicken with half of the mixture and place in the refrigerator to chill. Remove chicken from marinade and discard. Grill chicken turning once halfway through. Once cool enough to handle, slice into strips and set aside. Make the salad by combining strawberries, mozzarella, avocado, lettuce, and grilled chicken strips in a large bowl. Drizzle the reserved dressing over the top and toss to coat. Sprinkle with fresh basil and serve immediately.

Steps to make Balsamic Grilled Chicken Strawberry Caprese Salad

Make the dressing/marinade

In a small bowl, whisk ⅓ cup of olive oil, ⅓ cup of balsamic vinegar, 1 tablespoon of Dijon mustard, 1 tablespoon of agave syrup, 2 cloves of minced garlic, ½ teaspoon of pepper, and 1 teaspoon of salt until smooth.

Marinate chicken

Divide the marinade mixture in two and pour one half into a plastic bag. Place the chicken breasts in a plastic bag and seal before refrigerating the chicken for at least 2 hours.

Remove chicken from marinade

Remove the chicken from the marinade and throw away the marinade. Keep the reserved half for the dressing in the refrigerator.

Grill chicken

Grill the chicken over medium-high heat for about 15 minutes. Turn once halfway through until the chicken registers 165°F. Once the chicken is cool enough to handle, slice into strips and set aside.

Assemble salad

Combine 2 cups of fresh sliced strawberries, 8 ounces of sliced fresh mozzarella cheese, 1 pitted and sliced avocado, 4 cups of chopped romaine lettuce, and grilled chicken strips.

Dress salad

Drizzle the salad with the reserved balsamic dressing and toss to coat.

Sprinkle the salad with 2 tablespoons of minced fresh basil and serve immediately.
