1 Yellow onions chopped
½ tsp Fresh thyme minced
1 clove Garlic minced
½ tsp Turmeric
2 cups Vegetable stock or chicken if not vegan/vegetarian
10 oz Frozen peas reserve some for garnish
1 tsp Salt
½ tsp Black pepper freshly ground
Optional garnishes:
Fresh dill chopped, to taste
Pea shoots to taste
4 Radishes thinly sliced

In a pan over medium heat, heat 1 tablespoon olive oil and sauté 1 chopped onion and ½ a teaspoon minced thyme, about 5 minutes.

Add garlic and turmeric

Add 1 minced clove garlic and ½ a teaspoon turmeric and sauté 1 minute more. Remove the pan from the heat.

Combine ingredients

In a blender or food processor, combine onion mixture with 2 cups vegetable stock, 10 ounces frozen peas, 1 teaspoon salt, and ½ a teaspoon black pepper.

Blend until completely smooth. Taste and adjust seasoning if needed.

Serve

Top with thinly sliced radishes, pea shoots, reserved peas, chopped fresh dill, a drizzle of olive oil, and freshly ground black pepper if you wish. Serve and enjoy!
