I’m all for these stuffed pepper recipes and so I had to add this Easy Chicken Pesto Stuffed Peppers to the list, naturally! Best made with medium, sweet yellow or orange peppers and stuffed with a hearty filling made from shredded rotisserie chicken, cooked brown rice, premade pesto and shredded cheese to keep it all together.
I love a dish that takes just minutes to prepare and leaves you licking the plate clean. This recipe, in my opinion, tops the charts!
To make Easy Chicken Pesto Stuffed Peppers, you will need the following ingredients:
Place 4 medium, halved peppers on a baking sheet, skin side up and broil about 4 inches from the heat for about 5 minutes until the skins loosen and blister. Remove from the heat.
Reduce the oven temperature to 350 °F.
In a large bowl, combine 1½ cups of shredded rotisserie chicken with 1½ cups of cooked brown rice and 1 cup of prepared pesto.
Once cool enough to work with, spoon the chicken mixture into the peppers to fill and then return to the baking sheet.
Bake in the preheated oven for about 5 minutes until heated through the center.
Top with sprinkles from ½ cup of shredded Havarti cheese evenly divided over each pepper.
Return to the heated oven and bake a second time for about 3-5 minutes until the cheese melted.
Garnish with sprinkles of fresh basil leaves, if you wish!
