This Famous Crispy Potato Casserole gets its name from the first time I brought this dish to a potluck dinner. Everyone was obsessed with it and I have had to make this casserole for every potluck since!
To make these delicious vegan crispy potatoes, start by seasoning potatoes with thyme, salt, pepper, and garlic and onion powder and pouring over olive oil. Spread the potatoes into an even layer in a baking dish. Roast in the oven. Every 20 minutes, use a spatula to scrape any stuck pieces from the bottom of the pan and toss potatoes around. Once the potatoes are almost done, chop up a yellow onion and 6 cloves of garlic and saute until caramelized and cooked down. When the potatoes are cooked, transfer the onion and garlic mixture to the dish with the potatoes and stir.
To make my Famous Crispy Potato Casserole, you will need the following ingredients:
Preheat the oven to 425 °F.
Place 3 pounds of diced potatoes in a 13 x 9-inch baking dish. Season with thyme, salt, pepper, and garlic and onion powder. Drizzle ½ a cup of olive oil over the potatoes and toss until well coated.
Spread the potatoes out into an even layer in the dish so that they cook evenly.
Roast the potatoes in the preheated oven for around 1½ hours. Every 20 minutes, remove the dish from the oven and, using a spatula, scrape any cubes that are the bottom of the pan and toss the potatoes well to ensure even cooking.
When the potatoes are almost cooked, add a dash of olive oil to a skillet. Saute onion and garlic over medium high heat for 10-15 minutes, or until caramelized and cooked down.
Stir the sauteed onion mixture through the potatoes to serve.
