2 tbsp Honey or 1 tbsp monk fruit sweetener, or 2 tbsp maple syrup, if you are not low carb
2 tbsp Apple cider vinegar
1 lb Ground beef
2 tbsp Sesame oil toasted
1 tbsp Fresh ginger finely grated
3 cloves Garlic minced
2 Zucchini medium, spiralized

This Sesame Ginger Beef Zucchini Noodles recipe is another of my delicious healthy lunches, which I love to prepare in advance. I am obsessed with zucchini noodles or Zoodles, as I call them! They are a super way to cut carbs at lunchtime.

To make this delicious recipe, start by shaking soy sauce, apple cider vinegar, and monk fruit sweetener together to make a sauce. Add beef to a hot skillet and cook it until cooked through. Drain excess grease from the pan if necessary. Push the beef to one side and add sesame oil, ginger and garlic. Stir fry and add the sauce. Toss to coat the beef. Cook until evenly coated and remove from heat. Assemble the week’s lunches by dividing up the beef between four lunchboxes along with the spiralized zucchini. Store in the refrigerator for up to 4 days. When you are ready, simply reheat in the microwave until steaming hot. Mix the well and enjoy.

Steps to make Sesame Ginger Beef Zucchini Noodles

Prepare sauce mixture

Shake ÂĽ cup of soy sauce with 2 tablespoons of apple cider vinegar and 1 tablespoon of monk fruit sweetener and set to one side.

Heat skillet

Place a non-stick skillet over medium heat until hot.

Cook beef

Add 1 pound of ground beef and cook for 7-10 minutes, using a spatula to break the beef as you cook. Once cooked through, carefully drain excess grease from the pan if needed.

Sauté garlic and ginger

Push the beef to one side and add 2 tablespoons of sesame oil, 1 tablespoon of grated ginger and 3 minced cloves of garlic. Sauté for 1 minute.

Add sauce

Add the soy sauce mixture and toss the beef to coat fully. Cook the mixture for 1 minute until evenly coated. Remove from heat.

Assemble

Divide the beef mixture among four lunchboxes. Top with spiralized noodles.

Refrigerate

Store in the refrigerator until ready to serve.

Serve

Reheat in the microwave to serve.
