To make my version of Italian Salad with Lemon Vinaigrette, you will need the following ingredients:
Take your favorite large salad bowl and combine 1 package of salad greens, a small thinly sliced red onion, 1 cup of sliced fresh mushrooms, 1 cup of chopped assorted olives and 8 pepperoncini.
Add chopped tomatoes, shredded carrots and grated Parmesan cheese as toppings.
In a medium sized jug, mix ⅓ cup of extra virgin olive oil, 3 tablespoons of lemon juice, 1 teaspoon of Italian seasoning, salt and pepper to make the vinaigrette dressing.
Serve the salad with the vinaigrette in a jug on the side. Your guests can drizzle their own dressing!
