This Keto Chocolate Soufflé is a fantastic low-carb dessert that the whole family will love! Some people find the idea of soufflé frightening as they picture removing it from the oven and seeing it deflate like a balloon that’s been popped by a pin. I’ve made this souffle many times, and it has always worked for me!
To make this delicious soufflé, start by melting chocolate in a metal bowl over a saucepan of simmering water. Add yolks and whisk with a fork. Don’t worry if the mixture hardens. Whisk egg whites and sugar until the whites just hold stiff peaks. Stir about 1 cup egg whites into the chocolate mixture to lighten it. Then gently fold the chocolate mixture into the remaining egg whites using a silicone spatula. Pour the mixture into a soufflé dish. Run the end of your thumb around the inside edge of the soufflé dish to help the soufflé rise evenly. Bake the soufflé in the middle of the oven until it is puffy and crusty on top but still jiggly in the center. This dessert should be served immediately.

Preheat the oven to 375 °F. Grease a soufflé dish with 1 tablespoon of butter.
Melt 5 ounces of unsweetened chocolate in a metal bowl over a saucepan of simmering water. Stir constantly until the chocolate is fully melted.
Remove the bowl of melted chocolate from the heat. Whisk in 3 large egg yolks using a fork.
Whisk 6 egg whites with a pinch of salt in a large bowl with an electric mixer at high speed. Gradually add ⅓ cup of sugar a little at a time. Continue to whisk until the egg whites hold stiff peaks.
Stir approximately 1 cup of the whisked egg whites into the chocolate mixture to lighten it. Add the mixture to the remaining whites and carefully fold it in using a silicone spatula.
Pour the mixture into the prepared soufflé dish. Run the tip of your thumb around the inside edge of the soufflé dish.
Place the dish in the center of the oven and bake for about 20 minutes until puffed and crusted on top but still jiggly in the middle.
Serve immediately with a large dollop of whipped coconut cream on top.
