Whisk egg whites and sugar until the whites just hold stiff peaks. Stir about 1 cup egg whites into the chocolate mixture to lighten it. Then gently fold the chocolate mixture into the remaining egg whites using a silicone spatula. Pour the mixture into a soufflé dish. Run the end of your thumb around the inside edge of the soufflé dish to help the soufflé rise evenly. Bake the soufflé in the middle of the oven until it is puffy and crusty on top but still jiggly in the center. This dessert should be served immediately.
