
Spiced Pork Tenderloin is one of my favorite recipes. There is something about the spice rub which I make by grinding cloves, bay leaves, and whole peppercorns finely using a spice grinder or mortar and pestle. I add the ground spices to sage, sugar, and salt before rubbing it into the meat. It gives the most wonderful seasonal flavor.
To make this, start by making a spice rub by mixing ground cloves, bay leaves, and peppercorns with sage, sugar, and salt. Rub the spice mixture evenly all over a piece of pork tenderloin. Sear the tenderloin on all sides in a skillet with hot oil. Roast in the oven for about 20 minutes. Transfer the cooked meat to a clean cutting board and rest for about 10 minutes before slicing. This is so versatile – you could serve it hot with vegetables or at room temperature or cold for sandwiches.
