I’ve been snacking on this healthy hummus over the past weekend. And I consider it’s also perfect for a lunchbox, besides it takes only 5 minutes to prepare. Making hummus yourself is super easy, and it will taste far better than any from the deli department. Though this hummus recipe uses canned garbanzo beans, I encourage you to cook garbanzo beans by yourself, using our Canning Chickpeas fail-safe recipe.
To prepare this Lemon Beet Hummus you will need the following ingredients:
Drain and rinse 1 can garbanzo beans with cold water.
In a food processor fitted with the blade attachment, combine rinsed and drained garbanzo beans with ¼ cup tahini, juice and zest of 1 lemon, 2 peeled cloves garlic, 2 tablespoons fresh parsley, ½ teaspoon ground cumin, and 1 teaspoon kosher salt. Blend all ingredients until almost smooth for 2-3 minutes, pausing halfway to scrape down the sides.
With a motor still running, drizzle in ¼ cup extra virgin olive oil until smooth and creamy.
Serve garnished with extra drizzle of olive oil and chopped pistachios.
