My dinner parties are usually always with a theme, and this Mexican Baked Fish is a popular menu choice for a different twist on Mexican night. With all the ingredients that the best tacos should have, I use them as toppings to baked cod.
You can design your fish as spicy and as mild as you and your guests prefer with a salsa of your choice, sprinkle tons of oozing, melted cheese, and top with those traditional, crunchy corn chips, and the Mexican flavors will just pop all over your tastebuds! Accompany with black bean rice, warm tortillas and a fruity margarita and your Mexican Madness is ready in minutes!
To make Mexican Baked Fish, you will need the following ingredients:
Preheat oven to 400 °F and lightly grease an 8x12-inch baking dish.
Rinse the fish fillets under cold water, and pat dry with paper towels. Place the fish fillets neatly, side by side, in the prepared baking dish.
Pour the salsa over the top of the fillets, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
Bake uncovered in the preheated oven for about 15 minutes, until the fish is opaque and flakes with a fork.
Serve topped with sliced avocado and sour cream.

Honestly obsessed with how this turned out its great with some sourcream on top too.
Not really my thing but it wasn't bad I just disliked the spices so I'll have to play around with them a bit.
Baked fish is legit my fav and now I'm hooked on this one because of how zesty and slightly spicy it is.
Thanks, great and simple recipe exactly what I was looking for.
