4 Leek small, washed and thinly sliced
4 x 125 g / 4 ½ oz Salmon fillets, skinless
For yuzu dressing:
2-cm / ¾-inch piece Ginger root fresh, peeled and grated
2 cloves Garlic minced
1 Red chili small, seeds removed and finely chopped
2 tbsp Yuzu juice
4 tbsp Olive oil light
Salt to taste
Black pepper freshly ground, to taste
For garnish:
1 small bunch Cilantro leaves only
Radishes thinly sliced using a vegetable peeler

Skinless salmon filets seasoned with zesty yuzu dressing and oven-baked on a bed of buttery leeks to flaky perfection. Garnish with radish and cilantro tossed with yuzu dressing, and serve.  

    The flavorful yuzu dressing (recipe included) does double duty in this recipe. First, I use it to season the salmon and then as an irresistible dressing to toss with the radishes and cilantro. Of course, yuzu juice is the star of this dressing. The grapefruit-like flavor of the yuzu fruit adds a wonderful citrus aroma that pairs well with the salmon. The whole dish is prepared and baked in 35 minutes or less.  

    To make the Yuzu Salmon with Buttered Leeks, you will need the following ingredients:

    Steps to make Yuzu Salmon with Buttered Leeks

      Preheat oven

      Preheat the oven to 400 ℉.

      Prepare leeks

      In a large pan over medium–high heat, melt 1 ounce butter and add the thinly sliced leeks. Cook for a few minutes, then lower the heat and sauté for 15 minutes or until soft but not colored.

      Prepare yuzu dressing

      Meanwhile, in a small bowl, whisk together 2 minced garlic cloves,1 finely chopped red chili, 2 tablespoons yuzu juice, 4 tablespoons olive oil, a pinch of salt, and freshly ground black pepper to taste.

      Transfer leeks to baking dish

      Transfer the sautéed leeks to a baking dish.

      Add salmon

      Arrange 4 skinless salmon filets on top of the leeks, season with salt and black pepper. Set aside 2 tablespoons of the prepared yuzu dressing. Spoon the remaining dressing over the salmon so that the chili and ginger are on top.

      Bake the salmon for 12 to 15 minutes or until the fish is just cooked.

      In a medium bowl, toss the thinly sliced radishes and cilantro leaves with the reserved dressing.

      Remove the salmon and leeks from the oven. Divide the leeks and salmon between serving plates. Garnish the salmon with cilantro and radishes and serve. Enjoy!
