Preheat the oven to 400 °F.

Bring a medium pan of water to a boil and add the potatoes. Cook for 8 minutes. Drain them and leave them to dry in a colander for a few minutes.

Toss the potatoes with 1 tablespoon olive oil and salt and black pepper to taste in a sheet pan.

Roast the potatoes in the oven for 20 minutes, tossing halfway through.

Cook leeks

Meanwhile, in a skillet over medium heat, heat the remaining 1 tablespoon olive oil and add the sliced leeks. Cook for 5 minutes or until starting to soften.

Add garlic

Stir in 1 minced garlic clove and cook for 1 minute.

Add cream, water, and capers

Add 70 milliliters heavy cream, 75 milliliters hot water, and 1 tablespoon capers and bring to a boil.

Add chives

Stir in 1 tablespoon chopped chives.

Broil salmon

Pour the cream leek sauce over the potatoes, then place the salmon fillets on top. Grill for 7-8 minutes or until just cooked through.
