Recipe Description

Mexican Rice is one of the best side dishes for your next Mexican feast. This delicious rice recipe is cooked with onions and tomato sauce. Mexican rice is also known as Spanish rice and is a fantastic one pan dish.

To make this, start by heating oil in a large saucepan over medium heat and add rice. Sprinkle with salt and cumin and cook until puffed and golden. Stir in onions. Once tender, stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork before serving.
