To make this, start by heating oil in a large saucepan over medium heat and add rice. Sprinkle with salt and cumin and cook until puffed and golden. Stir in onions. Once tender, stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork before serving.
To make Mexican Rice, you will need the following ingredients:
Place 3 tablespoons of vegetable oil in a large saucepan over medium heat. Add 1 cup of rice.
Cook the rice in the oil, stirring constantly, until puffed and golden.
As the rice is cooking, sprinkle in 1 teaspoon of garlic salt and ½ a teaspoon of cumin.
Stir in ¼ cup of chopped onions and cook until tender.
Stir in ½ a cup of tomato sauce and 2 cups of chicken broth. Bring the mixture to a boil.
Reduce the heat under the saucepan to low. Cover and simmer for 20 to 25 minutes.
Fluff the cooked rice with a fork and serve.
