1 pound Shrimp medium, cooked, shelled and deveined, thawed
Salt to taste
1 cup Red onion chopped
1 cup Cucumber peeled, diced
½ cup Celery chopped
1 Jalapeño pepper minced
1 (15-ounce) can Whole peeled tomatoes chopped or 1 ½ cups chopped fresh tomatoes
½ cup Ketchup
ÂĽ cup Cilantro chopped
2-3 tbsp Lime juice
1 to 4 tbsp Hot sauce such as Crystal or Tabasco, to taste
1 cup Clamato juice chilled
1 Avocado cut into chunks

Spicy, peppery, sweet and sour, brimming with fresh and bold flavors, this flavorful coctel de camarones is easy to make and tastes addictively delicious. The best thing about this is that you just mix all the ingredients together and chill for 1 hour.   

To make this homemade shrimp cocktail, simply mix together shrimp, red onion, cucumber, celery, jalapeño, tomatoes, ketchup, cilantro, lime juice, and hot sauce in a bowl. Chill and add clam juice a little at a time until the shrimp cocktail is the consistency you wish. Gently stir in avocado and add more salt and hot sauce if desired. Serve in fancy glasses with tortilla chips or saltines on the side. It’s time to dig in!

Steps to make Mexican Shrimp Cocktail

Cut half of shrimp into chunks

Cut half of the cooked, peeled and deveined shrimp into large chunks. Leave the other half whole (for decorating) and let them cool in the refrigerator until ready to serve.

Toss shrimp with other ingredients and chill

In a bowl, combine chopped shrimp with 1 cup chopped red onions, 1 cup diced cucumber, ½ cup chopped celery, 1 minced jalapeño, 1 ½ cups chopped tomatoes, ½ cup ketchup, ¼ cup chopped cilantro, 2-3 tablespoons lime juice, and hot sauce to taste and gently stir. Chill for 1 hour.

Add clam juice

Add 1 cup clam juice a little at a time until the desired consistency is reached.

Stir in avocado and adjust seasoning

Add salt and more hot sauce to taste. Stir in 1 chopped avocado.

Serve

Transfer the shrimp cocktail to fancy glasses. Garnish with the reserved whole shrimp and serve with tortilla chips on the side.
