This Mushroom Meatloaf with Mushroom Gravy is a delicious take on a classic meatloaf. The mushrooms bring an added savory element to this tasty midweek meal. I like to serve a simple mushroom gravy with this meatloaf.
To make this dish, start by mixing all of the meatloaf ingredients until well combined. Place in a loaf pan or shape into free form loaf and place on a parchment lined sheet pan. Bake in the oven. As the meatloaf bakes, make the mushroom gravy by sauteing mushrooms and adding cornflour, beef broth and Worcestershire sauce. Cook while stirring constantly, until slightly thickened. Taste for seasoning and adjust to taste with salt and pepper.
To make my Mushroom Meatloaf with Mushroom Gravy, you will need the following ingredients:
Preheat the oven to 350 °F.
Place 1 pound of finely chopped button mushrooms in a large mixing bowl with 1 pound of ground meat, 1 teaspoon each of minced fresh thyme and onion powder, 1 tablespoon each of minced fresh Italian parsley, Worcestershire sauce and fresh minced garlic, 1 cup of fresh bread crumbs, ½ a cup of whole milk, 2 lightly beaten eggs, 2 teaspoons of kosher salt and ½ a teaspoon of black pepper. Mix well until fully combined.
Transfer the mixture to a 7 x 5-inch loaf pan or shape into a free form loaf and place on a parchment lined baking sheet.
Bake the meatloaf in the oven for 45 minutes.
Combine ¼ cup of milk and 2 tablespoons of cornstarch in a small bowl and set to one side.
Melt 3 tablespoons of butter in a large skillet over high heat. Add the mushrooms and onions. Saute while stirring over moderate heat for about 10 minutes until the mushrooms are golden.
Add the cornflour mixture and stir to coat. Cook for 5 minutes.
Stir in ½ a cup of beef broth and bring to a simmer. Add 2 teaspoons of Worcestershire sauce.
Cook the gravy over high heat, stirring constantly for about 1 minute, until slightly thickened.
Taste the gravy and adjust to taste with salt and pepper.
Serve slices of meatloaf with mushroom gravy poured over the top.
