To make this Red Onion Marmalade, you will need the following ingredients:
In a large pan over medium heat, heat 1 tablespoon olive oil and add 1.1 pounds sliced onion.
Stir well and cook for 20 minutes, stirring, unti soft.
Add ½ a cup brown sugar, stir and cook for 10 more minutes.
Add the remaining ½ a cup sugar, ⅓ cup balsamic vinegar, ¼ cup red wine vinegar, 2 minced cloves garlic, and 1 tablespoon Dijon mustard and stir. Bring to simmer.
Gently simmer for about 45 minutes or until the marmalade is thick and the liquid is evaporated. Allow the marmalade to cool before transferring to a sterilized jar.
Serve or seal and store in the fridge for up to 3 months.
