With this Red Onion Marmalade, aka red onion chutney recipe, you won’t need to buy anymore ready-made stuff to garnish your bruschetta or to serve with a cheese plate. This sweet and tangy marmalade or chutney is extremely flavorful and has the perfect balance of taste. This onion marmalade is vegan and gluten-free. And it is also great as a food gift for friends and family!

This recipe is perfect for onion storage since this delicious marmalade keeps well for up to 3 months in your fridge. To store, wash the jar and lid in hot soapy water, rinse well, then dry in the oven preheated to 300 °F for 20 minutes. Let cool and then spoon the marmalade. Seal, store, and enjoy!

Steps to make Red Onion Marmalade

Heat oil and add onion

In a large pan over medium heat, heat 1 tablespoon olive oil and add 1.1 pounds sliced onion.

Cook onion

Stir well and cook for 20 minutes, stirring, unti soft.

Add half sugar

Add ½ a cup brown sugar, stir and cook for 10 more minutes.

Add more sugar, vinegar, garlic, and mustard

Add the remaining ½ a cup sugar, ⅓ cup balsamic vinegar, ¼ cup red wine vinegar, 2 minced cloves garlic, and 1 tablespoon Dijon mustard and stir. Bring to simmer.

Simmer

Gently simmer for about 45 minutes or until the marmalade is thick and the liquid is evaporated. Allow the marmalade to cool before transferring to a sterilized jar.

Serve and store

Serve or seal and store in the fridge for up to 3 months.
