3 Eggplants medium or 2 large
4 tbsp Tahini
2 tbsp Yogurt vegan if needed
2 cloves Garlic minced with a pinch of salt
½ Lemon juiced
Salt to taste
For serving:
3 tbsp Pomegranate Arils
1 tbsp Olive oil extra-virgin
Pita bread

    Moutabel, similar to baba ganoush, is a delicious eggplant dip you can throw together without much effort. Made with oven-roasted eggplants, tahini, yogurt, garlic, and lemon juice, this popular dip is loaded with flavor. Garnished with fresh pomegranate arils, it makes a lovely appetizer for entertaining.

    Start with the eggplants. Prick them with a fork and roast in the hot oven until they begin to collapse. Then place the roasted eggplants in a bowl and cover to let them steam for a few minutes. Peel the eggplants and chop the flesh into small pieces. Place the flesh in a clean bowl and mash with a fork. Add the tahini, plain yogurt (I use vegan), minced garlic, lemon juice, and salt to taste. Mix until well combined. Serve with a drizzle of extra-virgin olive oil and pita bread. Enjoy!

    Steps to make Moutabel

    Preheat oven

    Preheat the oven to 450 °F.

    Pierce eggplants

    Pierce 3 medium eggplants with a fork and place on a baking sheet.

    Roast eggplants

    Roast the eggplants until they start to collapse, about 35-45 minutes.

    Steam eggplants

    Once roasted, place the eggplants in a bowl and cover for 5 minutes to steam.

    Peel eggplants

    Peel the eggplants and discard the skin. Roughly chop the eggplant and place the flesh into a large bowl.

    Add tahini, yogurt, garlic, lemon juice, and salt

    Add in 4 tablespoons tahini, 2 tablespoons yogurt, 2 minced garlic cloves, lemon juice, and salt to taste and mash everything until well combined and creamy.

    Serve

    Drizzle the moutabel with extra-virgin olive oil and sprinkle with pomegranate arils. Serve with warm pita bread. Enjoy!
