For the casserole:
- 8 Sausagesreduced-fat
- 1 Yellow bell pepperdeseeded and chopped

Sausage Casserole with Garlic Toasts
This Sausage Casserole with Garlic Toasts is a simple and delicious casserole which is bursting with flavor. I love the idea of serving this casserole with little garlic toasts on the side. To make the toasts I combine cream cheese and herbs and slather thick slices of homemade bloomer loaf with the mixture before grilling. Delicious.
To make this easy sausage and bean casserole, start by roasting sausages, pepper and onion in the oven. Add tomatoes and pour stock over the sausages. Season and stir well. Roast for another 20 mins. Serve with the garlic toasts, sprinkled with the remaining basil.

Steps to make Sausage Casserole with Garlic Toasts
Heat the oven to 425 °F.
Roast sausages, pepper and onion
Reduce oven heat
Turn the oven heat down to 390 °F.
Add tomatoes and stock
Return to oven
Make garlic toasts
Slice a 400-gram bloomer loaf into 8 thick slices. Combine together 25 grams of cream cheese, 1 tablespoon of butter, 2 crushed garlic cloves and 10 grams of roughly chopped fresh basil. Toast the bread lightly on both sides and spread one side with the cream cheese mixture. Grill until melted and golden.
