This Spicy Chicken and Cabbage Salad is a real wow factor. Fresh and full of the best colors and flavors with a toss up of juicy chicken, distinct red onions, garlic, red chili, cilantro leaves, peanuts, crunchy green cabbage and Persian cucumbers and simply seasoned with oil, kosher salt crystals and some lime juice.

    Combine chicken and onion mix

    In a medium pot over medium heat, add ½ chopped onion, 2 chicken breasts, 3 cloves of minced garlic, ½ a thinly sliced chili, 1 cup cilantro leaves, 2½ teaspoons of salt and 4 cups water and bring to a slow simmer.

    Meanwhile, in a small skillet over medium heat, heat oil and and ⅓ cup of peanuts with skin still on. Cooking, tossing frequently, for about 3-5 minutes until golden. Reserving cooking oil.

    In a large bowl, whisk reserved, chilled cooking liquid from the poached chicken, reserved peanut cooking oil and 2 tablespoons of lime juice until combined.

    Add ½ head of thinly sliced cabbage and season with salt. Use your hands to toss and massage the cabbage until generously coated and softened.
