½ cup Onion chopped
2 cloves Garlic minced
2 cups Mushrooms button, cleaned and sliced
½ tsp Sea salt
½ cup Walnuts
1 tsp Balsamic vinegar
Black pepper to taste
Parsley for garnish optional

When I first heard about Vegan Mock Chopped Liver I got so excited because as a vegan I can now enjoy the taste of chopped “liver” without the liver!

Made from onions, garlic, butter mushrooms and walnuts, that provide the same texture and crunch that you would get from normal chicken livers and flavored with vegetables broth, salt, balsamic vinegar and pepper. This dish is done so well that no one has yet noticed the difference!

To make Mock Chopped Liver, you will need the following ingredients:

Steps to make Vegan Mock Chopped Liver

Heat vegetable broth

In a large skillet over medium-high heat, heat ¼ cup of vegetable broth.

Add onion and garlic

Add ½ cup of chopped onion, 2 cloves of minced garlic and season with a few sprinkles of salt. Sauté for about 10 minutes, adding more broth or water as needed.

Add mushrooms

Add 2 cups of sliced button mushroom along with a bit more salt. Cook while stirring for about 5 minutes, until softened. Again, add more broth or water if needed.

Prepare mixture

Transfer cooked mushrooms along with ½ cup of walnuts, 1 teaspoon of balsamic vinegar and a pinch of pepper to a food processor.

Blend

Blend a few times until well combined but not smooth. Season to taste.

Serve

Garnish with sprinkles of fresh parsley leaves to serve!

Can't say this was the tastiest thing I've ever had, but it's pretty good. I put some extra spices in mine because I don't like how plain this turned out, so basically i added paprika and some vegan cheese. After that It way more flavorful.
