I am always trying to reinvent recipes that are healthier and Keto friendly and these Zucchini Pizza Bites are just that. Using a base of large zucchini sliced rounds instead of a flour dough, already cuts the calories, majorly.
I like to top mine with a bit of marinara sauce, grated mozzarella and pepperoni minis placed in a warm oven broiler for a few minutes to melt the cheese, giving you the perfect mini zucchini pizza slice.
To make Zucchini Pizza Bites, you will need the following ingredients:
Preheat oven to broil setting.
In a large skillet, over medium-high heat heat the olive oil and working in batches cook the zucchini rounds for 1-2 minutes on both sides until golden brown on each side.
Once cooked, season with salt and pepper to taste.
Place the cooked zucchini rounds on a large baking sheet for baking in the preheated broiler.
Place a bit of marinara sauce, mozzarella and pepperoni minis on top of each zucchini round.
Place the completed baking sheet into the preheated broiler and cook for 1-2 minutes until the cheese has melted.
Garnish with sprinkles of Italian seasoning, if you wish, before serving. Enjoy hot!
