This Chili Lime Watermelon Salad is one of my favorite recipes to make on a hot day. I love the kick of heat from the chili, creamy Mexican cheese, and zesty lime juice and zest. A perfect combination all around!
To make this delicious watermelon salad, place watermelon cubes in a large bowl. Sprinkle it with salt and chili powder to taste. Toss well and squeeze lime juice over the top. Sprinkle with lime zest and serve garnished with crumbled cotija cheese and cilantro. Serve immediately!
To make Chili Lime Watermelon Salad, you will need the following ingredients:
Place 4 cups of watermelon cubes in a large bowl. Season with a pinch of salt and ¼ teaspoon of chili powder (or more to taste).
Mix well to coat evenly.
Drizzle with lime juice and sprinkle with the lime zest.
Add 3 tablespoons of crumbled cotija cheese and 1 tablespoon of chopped fresh cilantro.
Serve immediately.
