4 Pork chops bone-in, about ⅘-inch thick and 9 oz each

Looking for the quickest and tastiest pork chop marinade? Look no further than this Great Pork Chop Marinade! We love a good pork chop in this house, and I am always looking for new ways to cook it. And I have to admit this marinade ensures juicy and tender meat every time. With loads of flavor, it’s a pork chop lover’s dream—whether seared on the grill or in the pan, which is how I usually cook it.

The marinade is a simple mix of light soy sauce, Worcestershire, Dijon mustard, minced garlic, and black pepper. I like to add a little brown sugar to add more flavor and boost the browning. Marinate the pork chops for at least 1 hour or up to 24 hours. Remember to take the chops out of the fridge 20 minutes before cooking. Heat a grill pan over medium-high heat and lightly brush it with olive oil. Place the pork chops on the grill pan and cook on both sides until caramelized and the pork releases from the pan easily. Baste the chops with the remaining marinade just before they finish cooking. Let rest before serving. These pork chops make a great dinner main course when served with a side, green salad, and some crusty bread.

Steps to make Great Pork Chop Marinade


Make marinade


In a ziplock bag, combine ⅓ cup light soy sauce, 2 tablespoons brown sugar, 2 teaspoons Worcestershire sauce, 1 teaspoon Dijon mustard, 2 minced garlic cloves, and ¼ teaspoon black pepper. Seal the bag and massage to combine.


Marinate pork chops


Add in 4 pork chops and massage to coat well. Place in the fridge to marinate for 1 to 24 hours.


Remove from fridge


Remove the pork chops from the fridge 20 minutes before cooking.




Preheat a grill pan over medium-high heat. Lightly brush the pan with some olive oil. Add the pork chops and cook for 4 minutes or until caramelized and the pork releases from the pan easily, then turn the chops and cook for another 3 minutes.




Brush both sides with the remaining marinade and cook for 30 seconds more per side.


Let rest


Transfer the grilled pork chops to a platter and cover them loosely with foil. Let rest for 3 minutes before serving.
