And I have to admit this marinade ensures juicy and tender meat every time. With loads of flavor, it’s a pork chop lover’s dream—whether seared on the grill or in the pan, which is how I usually cook it.
The marinade is a simple mix of light soy sauce, Worcestershire, Dijon mustard, minced garlic, and black pepper. I like to add a little brown sugar to add more flavor and boost the browning. Marinate the pork chops for at least 1 hour or up to 24 hours. Remember to take the chops out of the fridge 20 minutes before cooking. Heat a grill pan over medium-high heat and lightly brush it with olive oil. Place the pork chops on the grill pan and cook on both sides until caramelized and the pork releases from the pan easily. Baste the chops with the remaining marinade just before they finish cooking. Let rest before serving.
