For green salad:
5 oz (about 5 cups) Spring mix salad greens
1 Granny Smith apples large or 2 small
⅓ cup Cranberries dried
¼ cup Pepitas green pumpkin seeds or chopped raw pecans
2 oz Goat Cheese chilled, crumbled. about ⅓ cup
For apple cider vinaigrette:
¼ cup Olive oil extra-virgin
1 ½ tbsp Apple cider vinegar
1 ½ tsp Honey
1 tsp Dijon mustard
¼ tsp Sea salt fine
Black pepper freshly ground , to taste

Green Salad with Apples, Cranberries and Pepitas


I love this Green Salad with Apples, Cranberries and Pepitas. It is really easy to make and tastes absolutely delicious. I love the addition of chilled creamy goat cheese in this salad. 

To make this, start by toasting pepitas in a skillet. Leave to cool. Make an apple cider vinaigrette by whisking together olive oil, apple cider vinegar, honey, Dijon mustard and season with salt and pepper. Thinly slice a Granny Smith apple. Assemble the salad in your favorite salad bowl. Dress with the vinaigrette and toss well to coat. Serve immediately!

Steps to make Green Salad with Apples, Cranberries and Pepitas


Toast pepitas


Toast ¼ cup of pepitas in a medium-sized skillet, over medium heat, stirring frequently, until they are golden on the edges and making little popping noises. Transfer to a small bowl to cool.


Make dressing


Whisk together ¼ cup of olive oil, 1 ½ tablespoons of vinegar, 1 ½ teaspoons of honey, 1 teaspoon of mustard, and ¼ teaspoon of salt until well blended. Season to taste with freshly ground black pepper.


Chop apple


Just before serving the salad, chop the Granny Smith apple into thin, bite-sized pieces.


Assemble salad


Place 5 cups of greens in a large salad bowl. Top with sliced apple, ⅓ cup of dried cranberries and the toasted pepitas. Use a fork to crumble 2 ounces of goat cheese over the salad.


Dress salad


Drizzle the salad with just enough dressing to lightly coat the leaves once tossed. Gently toss the salad ingredients.



Serve immediately.
