Green Salad with Apples, Cranberries and Pepitas
I love this Green Salad with Apples, Cranberries and Pepitas. It is really easy to make and tastes absolutely delicious. I love the addition of chilled creamy goat cheese in this salad.Â
To make this, start by toasting pepitas in a skillet. Leave to cool. Make an apple cider vinaigrette by whisking together olive oil, apple cider vinegar, honey, Dijon mustard and season with salt and pepper. Thinly slice a Granny Smith apple. Assemble the salad in your favorite salad bowl. Dress with the vinaigrette and toss well to coat. Serve immediately!
