Green Salad with Apples, Cranberries and Pepitas

I love this Green Salad with Apples, Cranberries and Pepitas. It is really easy to make and tastes absolutely delicious. I love the addition of chilled creamy goat cheese in this salad. 

To make this, start by toasting pepitas in a skillet. Leave to cool. Make an apple cider vinaigrette by whisking together olive oil, apple cider vinegar, honey, Dijon mustard and season with salt and pepper. Thinly slice a Granny Smith apple. Assemble the salad in your favorite salad bowl. Dress with the vinaigrette and toss well to coat. Serve immediately!

    Toast ¼ cup of pepitas in a medium-sized skillet, over medium heat, stirring frequently, until they are golden on the edges and making little popping noises. Transfer to a small bowl to cool.

    Whisk together ¼ cup of olive oil, 1 ½ tablespoons of vinegar, 1 ½ teaspoons of honey, 1 teaspoon of mustard, and ¼ teaspoon of salt until well blended. Season to taste with freshly ground black pepper.

    Just before serving the salad, chop the Granny Smith apple into thin, bite-sized pieces.
