This Grilled Chicken Mango Salad is one of my all-time favorite summer meals. It is full of healthy ingredients like avocado, cucumber, pepper, and grilled chicken. The mango in the recipe name refers to my Creamy mango cilantro salad dressing which is the perfect dressing for this flavorful salad.
This summer salad couldn’t be easier to make. Start by marinating chicken in mango cilantro salad dressing. Leave to marinate for 15 minutes. Once marinated, grill the chicken and set aside to rest before slicing. Assemble the salad in a large bowl and add the grilled chicken. Pour the dressing over top and toss well to combine. Serve immediately.
To make my version of Grilled Chicken Mango Salad, you will need the following ingredients:
Mix 6 chicken thighs with half a cup of mango cilantro salad dressing. Set aside for 15 minutes to marinate.
Add 1 tablespoon of olive oil to a griddle pan. Grill the chicken for 15 minutes, turning halfway.
Leave the chicken to rest for 5-10 minutes before slicing.
Add 5 cups of roughly chopped lettuce, 2 diced cucumbers, 1 thinly sliced bell pepper, 1 ripe avocado and ½ a cup of roughly chopped cilantro to a large bowl with the grilled chicken.
Pour ½ a cup of dressing over the salad and mix well.
Serve immediately.
